  hard cider

I tried the hard cider recipe that came with the EZCaps. I used anorganic cider, added 1c sugar, 1/8tsp yeast, and fermented for 4days. It is fairly strong (I am guessing 7-9% alcohol) and a littlebitter. What do you think? Too much sugar? Should I have used plainapple juice instead of cider?ORGINAL POSTER: bj

I slowly poured my clarified brew out and got about 70% of it beforethe slug started to mix in. I let the rest sit for another day andtried again. I ended up getting 90% or better.   Problem fermenting

It wont stop, I placed my white wine in the fridgeafter 4 days. Waited 3, the wine did not clarify andsmelled extremely yeasty and tasted awful. HI BJ why not try adding a different sugar like corn sugar makes for a smoother drink or a liquid sugar instead of normal white cane sugar but if thats doesnt make it less bitter try using apple juice plus add a cup 250mls of pear juice just an idea ya never know til ya giv it a go cheers n good drinkin BJ wrote: I tried the hard cider recipe that came with the EZCaps. Well, theres never too much sugar, mabye you might want to do a cup and a quarter sugar next time. Did you make sure no sediments came out of the bottom of your bottle. I find if i take some of that screen door screen and put it over a funnel, and then CAREFULLY pour my EZCAPPED bottle into it it works well. The bitter taste might have been because of sediments that got in the drink. Anyhow, try the screen thing i use, add a lil more sugar and dont let it ferment so long if you dont want something w/ that much bang. Try 2 or 3 days next time. Anyhow, goodluck.
