They are added tofresh fruit juices 24 hours before adding yeast to kill any molds andact as an antioxidant.Being you are using prepared juices you don't need the campden.It can also be used in stronger doses to sterilize your equipment.Hope this helped you in some way.ORGINAL POSTER: xray4545

The wonder wine kit contains no sugar, the recipe is entirelydependant on how much you add. If you add more sugar to one bottle, itwill take longer to ferment. There is nothing wrong with using a wonderwine kit, the end product doesn't taste bad, but it DOES take a long timefinish fermentation. Following their instructions seems to always end up adrink sweeter than I expected. I recommend adding some real fruit juice(apple, grape, whatever) to their kit to make a better tasting and betterfermented beverage. Even a little bit of juice, like a 1/2 cup, will addsome much-need nutrients for the yeast to dine on.The yeast that comes with EZ Caps is specially formulated for aquick and clean fermentation to high alcohol percentage. Used side-by-sidewith other yeasts it generally outperforms them all. Hello to all,I was curious, I started making my wine using wonder wine. Itgives you everything you need to make wine but it takes anywhere fromsix to eight weeks. I understand how the caps themselves work but howdoes it ferment faster or seem to than others? I am making wonderwine the same way with the plastic on top to make "still" wine. TheEz caps wine taste's like it has just as much alcohol content and ithas been only brewing for 4 days. Is it because there is more yeastthan sugar? Hello to all,I am making two different bottles of wine using the welch's whitegrape juice concentrate and the regular (purple) grape juice.The white juice I am making with the ez cap on it to make itcarbonated but the purple one I just put the plastic wrap on top andpoked a hole in it as per the instructions.Everything is going well but here is the problem, the dark grapejuice with just the platic wrap on top has some carbonation to it.Why does it have this? and will it go away before bottling? Also, isit normal for it to be carbonated for a while then lose it after itdone fermenting?Thanks to all for your help.ORGINAL POSTER: xray4545

What you are observing is justthe yeast "breathing". Because the gas can escape because of nopressurization, the beverage will not be carbonated.> and will it go away before bottling?Yes. However if the yeast is still active after bottling it mightcarbonate in the bottle.
