After fermentation is complete, you can rack it off to another vessel, I use a U shaped syphon tube to prevent any carry over of the dregs from the bottom of the bin, An alternative is to decant it straight into bottles,2 pairs of hands are useful. Use a clear syphon tube to see what is coming over, gently tilt the bin as you near the bottom. As soon as you see any carry over, stop the process. Store the bottles upright in your fridge, this will also help to clarify the wine. Once clear, you should decant to the final product. I hope this helps. i had an interesting experience the other day. when i was slowly unscrewingthe cap to my "strawberry breeze"... it didn't start hissing slowly like theynormally do. all of a sudden there was a huge BANG and the cap shot off thetop of the 2 liter and hit my hand! there was about a 3 foot spray of mist thatshot out as well! luckily, my hand was there and nothing else. haha, the redspot on my hand has gone away and i'm just fine... however, be careful whenopening these things! that scared the crap outta me and everyone else in theapartment!ORGINAL POSTER: chase

That is at an average tempof around 73deg. I have done 1-1/4 to 1-1/2 cup batches as long as 13days.What I do when I want to sample is this. Put the 2L bottle in freezerfor about 15 to 20 minutes. Place it on a flat surface of the freezerand not a rack. After 15 to 20 minutes enough chill will be conductedthrough the bottom of your 2L bottle. It will be quite cold where allthe sediment is with out chilling the entire contents of the bottle.Then slowly bleed a little gas at a time. Do it right and you willonly get up to one inch of foam on top. Taste your sample. If it isto sweet then ferment longer.
