Not too bad.
I used:
2oz of ginger, grated.
1 cup of cane sugar.
the juice of one lemon.
the ez caps yeast

20hrs later the bottle was hard, i put it in the fridge and cooled it.
i think more ginger and no lemon would make this even better.
maybe when i do it again i will make a simple syrup with the ginger steeped instead of just dumping everything in the 2liter.

Much better with the added ginger, the recipe from the instructions never "did it" for me. LOL. i'm from the south and we have Buffalo Rock, so i like it real gingery. plus i figured most people used it for the alcohol.

I prefer Ginger Beer over Ginger Ale, so I tried 1 cup sugar, about 2.5 tbsp of lemon juice, and about 1/4 cup of ginger juice (I live near a Chinese market, so ginger is cheap for me). This was MUCH too sweet, so I did a second batch using 1/2 cup of sugar, and the rest the same. This tasted similar to a strong ginger ale. If I make it again soon, I'll use as much ginger as I can get, and 1/2 cup of sugar. I like my drinks less sweet than most.
