I used: 2oz of ginger, grated. 1 cup of cane sugar. the juice of one lemon. the ez caps yeast 20hrs later the bottle was hard, i put it in the fridge and cooled it. i think more ginger and no lemon would make this even better. maybe when i do it again i will make a simple syrup with the ginger steeped instead of just dumping everything in the 2liter. LOL. i'm from the south and we have Buffalo Rock, so i like it real gingery. plus i figured most people used it for the alcohol. Re: Ginger Ale. - Ratica - 07-19-2010 I prefer Ginger Beer over Ginger Ale, so I tried 1 cup sugar, about 2.5 tbsp of lemon juice, and about 1/4 cup of ginger juice (I live near a Chinese market, so ginger is cheap for me). This was MUCH too sweet, so I did a second batch using 1/2 cup of sugar, and the rest the same. This tasted similar to a strong ginger ale. If I make it again soon, I'll use as much ginger as I can get, and 1/2 cup of sugar. I like my drinks less sweet than most. |
