anyone have some instructions on making champagne with these e-z caps ???
can champagne be made this way???

Well, technically anything called "champagne" has to be made in France:

Champagne (French: [ʃɑ̃.paɲ]; English /ˌʃæmˈpeɪn/) is a sparkling wine produced from grapes grown in the Champagne region of France following rules that demand secondary fermentation of the wine in the bottle to create carbonation.[1] Some use the term champagne as a generic term for sparkling wine,[2] [3] but many countries reserve the term exclusively for sparkling wines that come from Champagne and are produced under the rules of the appellation.[4] source http://en.wikipedia.org/wiki/Champagne

That being said you are probably referring to sparkling wine which is exactly what EZ Caps does best since the caps retain carbonation. Any of the standard wine recipes included with the kit or available on this web site make sparkling wines.
