You should use the e-z cap if you like your mead to be sparkling. If you like itto be still (uncarbonated), then you just need to use a regular penny bubbler orairlock that lets the CO2 out freely but keeps the nasties from getting in.One question about your recipe: when you say "1/2 water", is that a half-cup?
