Lots of different brew tests! Mead, Cider, Perry, Cyser..

Here's a compilation of my different brews and results... will update as I brew! Hope this guides the newbies Smile
Didn't have 2L soda bottles in Singapore, so I used 1.5L instead..
Note: Singapore temperatures is HOTI Temperatures range from 26 degree Celsius to 35 degree Celsius .. so ferment might be faster (before I get my electrical chiller, that is. See below)...I prefer sweeter ciders..

General:
For sanitation I used Morgan's Sanitize http://www.aussiebrewmakers.com.au/view/...55350.html to ensure no contamination , sprayed all equipments , bottles, caps before use

For fermenting sugars I used white cane sugar initially , but changed to Glucose (Dextrose) instead..

My first few brews..

1)Berri Apple Juice 1.4L
5.5 Tablespoon white sugar
Ferment time: 4 days
Remarks: Find it too tart.. didn't like the taste..

2) Berri Apple Juice 1.35L
5 Tablespoon white sugar
Ferment time: 5 days
Remarks: Too tart also

3)Florida's Natural Apple Juice 1.35L
5.5 Tablespoon White Sugar
Ferment time: 4 days
Remarks: Not bad, 2 of my friends said it's just nice, not too sweet, not too dry.

Bottled them in Flip Top Bottles bought from IKEA

2nd Batch: Increased sugar cos previous batch is too dry to my liking..

4) Marigold Cranberry Apple Juice 1.35L
15 tablespoon White sugar (!)
Ferment time: 4 days
Remarks: I find it not too bad~

5) Marigold Apple Juice 1.35L
14.5 Tablespoon White Sugar
Ferment time: 4 days
Remarks: Most of them say it's too sweet!! Taste wise ok

6) MEAD:Australian Honey 280ml, 1.2L Mineral Water
Ferment Time: 2 weeks
Remarks: Fresh mead tasted too honey-ish for me.. tasted better after 1 month..

3rd batch: Perry (HOT FAVOURITE)

7) Heinz Pear Juice 1.4L (4.3g Sugar / 100ml)
12 Tablespoon white sugar (+10.714g / 100ml)
Ferment Time: 4 days
Remarks: 100% of my friends LOVE this, very refreshing pear taste, sweet and tasty!

4th Batch - Getting more adventurous.. trying new juices..
Note: Used Glucose aka Dextrose from now on..

8) Marigold Pear & Mixed Berries 1.4L
9 Tablespoon Glucose
Ferment time: 4 days
Remarks: Very refreshing fruity smell, taste sweet/dry

9)Ceres Pear & Mango Juice 1.4L
9 Tablespoon Glucose
Ferment time: 4 days
Remarks: HORRID! Juice started to clump up, and I tasted it.. YUCK.

10) Qoo White Grape 300ml (one of my favorite drink!)
2.5 Tablespoon Glucose
Ferment time: 4 days
Remarks: Still tasted the same.. not sure if there is alcohol content? Didn't bubble as much as the rest..

5th Batch: Return of Perry !
Actually this is the 3rd run of Heinz Perry.. Too many request for the perry.. heheh..trying new formula..
Note: Tried using Lalvin wine yeast.. ICV D47 http://www.lalvinyeast.com/D47.asp
Got a electrical chiller to ensure constant ferment temperature.. (About 20-21 Degree Celsius)

Remarks: Tasted a little dry.. just a little.. maybe I should use Lalvin EC-1118 (More for ciders) instead..

12) Florida Natural Apple Juice 1.1L
Linden Honey 260ml (Winter Honey Trading Co)
ICV D47 Wine Yeast
Ferment time: 2 weeks+
Remarks: Not bad~ The cidery feeling hits you first , follow by the sweetness of the honey. Maybe it will taste much better after a few months.. but i cant wait!! hahahaa

13) Old Fashion Ginger Beer
Grated Old Ginger 15.25g
Cream of Tartar 15.25g
White Cane Sugar 168g
3/4 Lemon Juice
1.4L Water
EZ Caps Yeast
Ferment time 24hrs (or till the bottle is firm)
Remarks: Doesn't have the fiery taste of a ginger.. defintely there is a gingery taste.. but the lemonade after flavor seems to overwhelm it.. refreshing taste, but not close to what you get in market.. maybe I should get different ginger.. and use brown sugar.. But my local market doesnt sell Jamaican ginger!!! Only ginger powder and local old/young ginger..

1st , I placed all ingredients in 700ml water , bring to boil and add the balance 700ml in. Pour in bottle, place in Ice bath to bring the temperature down quickly. Add yeast and place in room temperature instead of chiller.
Note: The actual recipe uses Jamaica Ginger & Brown Sugar, which I didn't have.. So i just bought some old ginger root from the supermarket instead.. washed and grated it with the skin intact..

When you say 3/4 lemon juice, that is 3/4 of what?

Treetop Apple Cider 1.89L

Remarks: Sweetish, not overly sweet though. Kinda liked it!

15) Red wine?? Used less sugar than usual as the sugar content in the juice is quite high.. (as compared with Heinz Pear Juice (4.3g)
Ceres Red Grape Juice 1.9 Liters (30g sugar)
10 Tablespoon Glucose (+3.58 / 100ml)
Ferment time: 4 Days
Remarks: Refreshing , sweet taste~

17) Sunraysia Perry .. Hmmm its unfiltered crushed pear juice.. wonder if it would turn out clumpy like the mango juice..

4 days???

You're not getting a lot of alcohol content in just 4 days.
