Do NOT use bread yeast! Yeast are very small organizims that eat sugar and spit out carbon dioxide and alcohol. Wine yeast tend to spit out more alcohol and less CO2, and bread yeast the opposite. You can get wine yeast at just about any brew shop for about $1-2 a pack, a little less volume than what came with the kit. The kit yeast leans kind of toward a strong wine/weak nuetral champaign yeast, so that might be a good jumping off point. Since the yeast is so cheap, I recomend doing a little research and experimenting.
