The yeast in our wine/cider/mead kits is called "EZ Caps Yeast". The exact strains used are a trade secret.

Our beer kits use Munton beer yeast.

Mayotruck Wrote:I need to know these specs on the yeast then, for ideal fermentation:

1) bottom temperature
2) tolerable temperature (hottest)
3) Ideal temperature
4) Wine or champagne yeast?
5) Quick or not?
6) I assume its dry?
7) Maximum alcohol toleration?

Making delicious alcoholic beverages with EZ Caps means not having to worry about stuff like that. Just add yeast to fruit juice, ferment, clarify, and enjoy.

Can't even answer one of my 7 questions and you didn't post my last comment lol, surprise. To actually have good results you must know the ideal temperature of the yeast and you actually need to know some of the questions. If you know the ideal temperatures and you can ferment at that temperature it will eliminate off flavors.

You know the answers yet you you deny the general public of having them.

Will this be posted? thank god I'm video taping this posting. XD

While using EZ Caps and EZ Caps yeast, you get great results without having to worry about temperatures. That is one of the reasons why the EZ Caps kit is great for the beginner.

To get clean crisp flavors you must ferment at the correct temperatures it is known worldwide. (Google it) If you brew to hot you will get off flavors, just they way it is. If you brew to cold you will kill your yeast...Your ezcap yeast is not an acception to the rule of wine or beer making, no matter what you say.
These 2 are know worldwide read anything on the subject and you will know this.

This is why I ask these questions and yet you just give these answers that do not help me your customer at all.

It's unreal, I purchased these and this is how you treat a customer? You just lie to them?

The yeast has been tested to be stable for the EZ Caps process with temps between 62-100 degrees. This is not to say that you can't go colder or warmer, however that is the range has been tested. Nobody lied to you- following the directions they are to be used indoors at normal room temperature which is generally defined as 68-77 degrees ( http://en.wikipedia.org/wiki/Room_temperature ).
