The pressure is normal. It's just carbon dioxide gas which is a by-product offermentation (using EZ caps pretty will always make champagne). If you want toremove the carbonation you need to use a regular air lock to allow the gas torelease without letting in outside air (cheap and available on-line or at anyhomebrew store). Also refrigeration doesn't totally stop the fermentation, itjust slows it down to a crawl, of course that depends on whether or not there'sany sugar left as well.
