Alcoholic Ginger Beer?

Hello again.

I want to try creating an alcoholic ginger beer. I figured I could take the Ginger Ale recipe from the original instructions that came with the kit, add a little more sugar and yeast and let it ferment for a week or so. Has anyone experimented with this before? Any advice is much appreciated!

one of my current batch is Ginger Ale Smile

It is the first time I make it and the result is terrific Smile

It was fermenting around 24 hours, it was a reused yeast so the fermentation started very fast. After these 24h the alcohol is 1.5% and still very sweet, it is a softdrink.

I expect to start a second batch of ginger ale today and leave it fermenting more days, we will see what happens Smile

I started 2 bottles with these recipes;

Bottle 1
2 oz fresh grated ginger
Juice of 1 lemon
300g granulated sugar
mineral water

Bottle 2
3.5 oz fresh grated ginger
Juice of 1 lemon
400g granulated sugar
mineral water

Both bottles took about 36 hours to get hard with fresh yeast, but they seem to be cooking away nicely now. I'm going to go for a 7 day ferment just to see what happens. This is only my 3rd EZ batch so I'm no expert yet, but I'm excited to see how this turns out! It feels great to have made something from completely raw ingredients!
