My house is generally too cold to brew so I've put together a little brewing box but the box is holding at a steady 88 degrees. The instructions call for 75- 80. Will that extra eight be too much or slow the rate at all?

Not at all, I have multiple bottles on my patio & I live in Florida. Right now the average temperature outside is about 90 degrees during the day, & I already have some fairly good stuff after only 4 days! Just try not to let it get rediculously hot, like above 95 degrees (the tolerance might be higher but just to be safe) and you should be fine.
