Thanks for the information. So I can start drinking this then?Can I pour off everything except the sediment in the bottom into another container? The pressure is normal. It's just carbon dioxide gas which is a by-product offermentation (using EZ caps pretty will always make champagne). If you want toremove the carbonation you need to use a regular air lock to allow the gas torelease without letting in outside air (cheap and available on-line or at anyhomebrew store). Also refrigeration doesn't totally stop the fermentation, itjust slows it down to a crawl, of course that depends on whether or not there'sany sugar left as well. Just got my EZ Caps a little over a week ago.I Added one cup of sugar to Grape Juice and 1/8 teaspoon of yeast, and kept itin a cabinet above the stove in the kitchen for the last 7 days.About 57 hours ago I put it in the fridge, but the EZ Cap still has gassescoming out. The little slit isn't stuck or anything to that sort, because I pushit back down flat and it opens back up right away, pushing on the outside of thebottle shows the contents are still under great pressure, and I can still feel afaint bit of air coming out of the cap.Is this normal? Gasses escaping suggests that it's still fermenting correct?I'm eager to try the final product, but I don't want to mess anything up.I guess what I'm asking, is at the present state this is in, where do I go fromhere? How about an EZ Cap that fits on 3 liter soda bottles maybe? Good Question!I did some research and learned some new things in the process. Ialways thought allspice was merely a mixture of cinnamon, clove, andnutmeg. It is not. It is from a berry that originated in Jamaica.This berry is dried and ground before use in foods from pumkin pie toJamaican Jerk Spice. The key ingredient that give allspice it'sflavor is eugenol, which is also found in cloves, cinnamon, andnutmeg.Some scientific studies have been done with cows and pigs to addsmall amounts of eugenol to their feed to reduce intestinalfermatation to aid in making their manure less toxic. Theexperiments were successful.My recently educated guess would be that allspice in the mash or must(depending on what you are making) will interefere withfermentation. My experience is that cloves will slow downfermentation but not stop it. A primary fermentation that I expectedto last 12 days took 16, so 20-25% longer. Hello, Welcome! I have enjoyed this product quite a bit and to tell you the truth, there is a bottle of fine blush wine in the fridge just calling out to me...but first, your question. Beer. I have to tell you that the easiest way that I have found is to go to your local homebrew shop. Find a hopped extract for what ever type of beer your heart desires and follow the directions from there. Just as a reminder, most beer extracts are made for 5 gallon batches so make sure to divide it appropriately, because you are making 2 liters... Anyway, happy brewing!
