I made a couple. Unfortunately, the rubber I used smelled like, well, rubber. But it worked. There is a special at the ez caps web site for buy-one-get-one-freereplacement yeast for just a couple of dollars. The specialincludes enough yeast to brew at least 200 liters of alcoholicbeverages. To get this much yeast from a home brewing store couldcost 10X this amount buying those little sachels that can't reseal.Replacement YeastAlthough any type of high-quality wine yeastwill work with EZ Caps, our special EZ Caps yeast will provide superiorresults making any type of wine, beer, or champagne. Our large andaffordable 16 gram bottle of yeast is a better deal than you canget anywhere else. This yeast has good tolerance to ethanol and freesulfur dioxide, and ferments to dryness. A very low producer of foam, urea, and fusel oils. Recommended for reds, whites and especiallychampagne. Winemakers have remarked it is the fastest, cleanest, and mostneutral fermenter offered and performs well restarting stuckfermentations. Ferments best between 45°-95°F. Alcohol tolerance 14%-16%or higher. You can buy your alcohol-producing yeast anywhere but for yourhealth and safety, NEVER use baking yeast. For a Limited Time: Buy one, get one free! For a limited time, get TWO big bottles of yeast for the price ofone: Only $4.99! Better yet, we'll ship the second bottle of yeast forfree. Total shipping/handling is only 99 cents. To qualify for thefree yeast promotion, all yeast must be shipped to the sameaddress.go towww.e-z-caps.comand click on 'purchase'At 04:16 AM 10/8/2006 +0000, you wrote: You can use another. Do NOT use bread yeast! Yeast are very small organizims that eat sugar and spit out carbon dioxide and alcohol. Wine yeast tend to spit out more alcohol and less CO2, and bread yeast the opposite. You can get wine yeast at just about any brew shop for about $1-2 a pack, a little less volume than what came with the kit. The kit yeast leans kind of toward a strong wine/weak nuetral champaign yeast, so that might be a good jumping off point. Since the yeast is so cheap, I recomend doing a little research and experimenting. Store your finished brew in the refridgerator in a screw top sealedbottle with as little air as possible. If you made a "quick wine" thatbrewed less than 2 weeks, you'll probably want to drink it within 3months or so. The longer you let it brew, the more stable it will be,and the longer it will keep.Enjoy!--- "Kristin" wrote:>> After I finish the process, how do I store it, and for how long?>ORGINAL POSTER: willum
