  Using 48 Hour Turbo

Hi, I have a pack of 48 hour turbo. Instructions say do not use an airlock.
Suppsedly this yeast acts so fast it would blow water out of an airlock
anyone with experience using turbo on ezcaps ?

  Tasting your beverage

I had a question about tasting or adding yeast to your beverage. I've seen that everyone says to taste your beverage to see if it is where you want it before you put it in the fridge but how exactly do you do that? I thought if you opened the bottle while it was fermenting, it ruined the process and that it also had a sort of volcanic eruption. I also don't want to disturb the yeast. So, how exactly do you taste it to know if it is where you want it? Thanks for your help!

  Hard lemonade question

I went to the store today to buy different juices in preparation for my ez caps that I should get on Thursday. I had been reading up on this forum and I read that lemonade was hard to ferment because of the preservatives. At the store today I came across a cheap (3 for $5) bottle of lemonade that said it was 100% juice no preservatives. Do you think this will work to make hard lemonade? If so, do you guys have any recipes? I also bought cherry-apple juice and some apple cider to use once I get my ez caps in the mail. All of the juices said the juice was from concentrate. I hope the lemonade will work. It would be an easy, cheap way to make it.

  Sanitizer and Bottles

Hello everyone! I'm excited to start brewing using EZ Caps but wanted to see if anyone uses sanitizer for the 2 liter bottle and the beer bottles? No one had mentioned it before so I just wanted to see if I need to get it or not. If you don't use the beer making sanitizer to make the beer...then what do you use? Just soap and water? Also, what has the shelf life been for your beer whe it's ready to drink? Thanks!!

  Alcoholic Ginger Beer?

Hello again.

I want to try creating an alcoholic ginger beer. I figured I could take the Ginger Ale recipe from the original instructions that came with the kit, add a little more sugar and yeast and let it ferment for a week or so. Has anyone experimented with this before? Any advice is much appreciated!

  Cranberry lemonade

I know that, for many, citrus has been a problem. But I think I have solved the problem! I just finished making a batch of cranberry lemon wine kind of stuff(not sure what to call it). Essentially all I did was buy some off-brand cranberry juice, cut up half a lemon into large wedges to cram them into the bottle, added about 1 1/2 cups of sugar, a handful of craisins, and finally everyone's favorite little spore (yeast). After about one day I had very rapid fermentation. I let it go for about 5 days which brought it up to about 14 proof. I ran it through a coffee filter to get rid of the lemon chunks and craisins. Now I have it clarifying, and it is tasting really refreshing and tart Wink .

My one complaint about this method has to do with carbonation. When I first removed my EZ Cap, I had lovely bubbles, but unfortunately after the filtering process I all but eliminated this carbonation.

If anyone has any suggestions of maintaining the carbonation, let me know! Otherwise, this method of adding citrus to your brew has worked for me splendidly. Right now I have a batch of Lemon-tea going strong with an entire lemon! If anyone has any questions let me know!

  Black Cherry Wine

I mixed 1 cup of sugar into a clean soda bottle 90% full with Nature's Promise Black Cherry Juice and added about 1/8th tsp of yeast. Screwed on the ezcap and have been letting is sit for about 2 days now. It doesn't look like it's fermenting because there are very few bubbles, no head and it doesn't smell like it's fermenting, it smells like straight yeast. I plan on letting it sit and ferment for about 14 days. My question is, does anyone know why it might not be fermenting? I also have a honey mead and concord grape brews that I mixed up as per the recipes list that came with the ez caps, both of which I used in the past and they seem to be fermenting just fine, so I don't know why the black cherry juice doesn't seem to be working. Anyone got any ideas?

Hi, i recently received my set of EZ CAPS. I very excited to start my new hobby. My question is, can I use 1 liter bottles? I want to experiment with different recipes on a small scale, then go to the 2 liter bottles if the recipes are a success. Also how much yeast should i add to it, a pinch?
