  Wonder Wine

I received a cherry wonder wine kit the same day as my EZ caps. Hasanyone experimeted with them? Looked like a package of Kool-aid to meso I'm not getting my hopes up too much. I did ad some welchesconcentrate for nutrients because I just can't see that stufffermenting well on it's own.The EZ caps yeast says it ferments much faster than the wonder winesays it does and much faster than any wine I've made in the past...isthe EZ caps yeast some sort of fast-reacting yeast? and could it beused just as well in a traditional wine making setup or is it designedspecifically for small batches fermented quickly?ORGINAL POSTER: mmadderom

  Enough Sugar?

Hi all. Got my EZ-caps kit on wed. and jumped right in starting 6different drinks experimenting with both welches concentrates and 100%juice products, all seem to be coming along great so far. Theinstructions that came with the kit reccomends 1 cup sugar in all ofit's sample recipes. That seems a little low to me for fermentationpurposes, am I going to be looking at low alcohol and/or very drybeverages? Or is 1 cup sufficient along with the various fruit juicesnatural sugars to produce a fairly high alcohol content and remainsemi-sweet?I've experimented with wine making in the past and am anxious to seehow well this method does. Does anyone have a good recipe forstrawberry and/or Watermelon wine with the EZ caps method? Findingactual strawberry or Watermelon juice on the store shelves is out ofthe question.Lastly, has anyone tried fermenting Iced tea? I'm currently tryinglemonade with some welches grape concentrate added for nutrients. Iassume I'd have to do the same with Iced tea?ORGINAL POSTER: mmadderom

  100% fruit juice

I just started my very first brew...It was 100% fruit juice and iadded about a cup of sugar to it...i looked at the bottle about 4hours after i added the yeast and capped it....it looks as if thereis floating dust almost...and a lot of it..it really looks likethere is dust bunnies all throughout the bottle..is this normal?ORGINAL POSTER: gotmilkjdt

What you are observing is a normal, healthy fermentation. I have.Hard apple juice in and of itself is a very bitterdrink, adding sugar helps, just do it very slowly. (Ihad the misfortune of having it explode like a modelvolcano). Leaving for about a week-week and half willgive it a fully body flavor, but for 10% stick toabout a week. If its not to taste, let the carbonationout a bit and add some sugar. I used Mott's Apple Juice about 4 days go..and i just re-tested itand it says i have an alcohol content of about 2.73 (this wascalculated from the s.g before and what it is now). I want to makethis drink pretty strong but maintaining a good taste. Im hoping toget it aroud 10 percent. 10% or more is possible. Apple juice contains a lot of sugar soif you added 1 cup it will continue to get stronger as it ferments.   Problems with white grape

Has anyone else had problems with white grape? I've noticed that theyeast will often fail to start in the white grape, and I have to re-pitch (sometimes several times).A few days ago, I did several white grape at once (all the samebrand). You're not going to win any awards with this stuff.As for your health, if you have put the yeast in and got CO2 in aday or two, that means that the yeast is working and producingalcohol - which will prevent other bacteria from taking hold. Soyou needn't be concerned about that. If its taking a long time tofinish, you might consider a closet with a space heater. Or, havepatience Smile As long as its fermenting, it won't "rot".Finally, I might question what you are expecting. Obviously, winedoes not taste like Welches + alcohol. The fermentation processchanges the taste of the fruit as well as consuming the sugar. oh...how about just leaving the EZ caps on the bottle? will that maintain the carbonisation? and would it be best to put in smaller bottles to eliminate air space?
