  Letting the air out

Hi all,I have had my e-z caps for almost a week now, and have 8 liters ofdifferent wines brewing. I just had 1 question.All other wine making steps I've read (not e-z cap) say to continuallylet the air out of the balloon or whatever it is you are using. ShouldI be doing this with the e-z cap? How often?Also it said to not let all of the air out, but I have been testingall of my wines at day 3, so obviously I have to let all of the airout to get some of the drink out. EZ Caps make sparkling wine and let excess gasses outautomatically. I am brand new to e-z caps, and am only on my first batches also butI can tell you one thing that jumped out at me from your post. I doknow that if it is in too warm of temperature (say above 80 degreesor so) then it can "violentaly ferment" which may be what caused yourproblem. But like I said I'm brand new and just offering up whatinformation I have read about.Also an FYI... you can't ever have too much yeast (since itmultiplies anyways). So I really think your problem may have beenwarmth if you think it was too high. If not I suppose you couldalways have just had a defective cap?Ok, I will leave this for someone who knows more about it than Ido. I had a problem with one batch I made. I think it either got toowarm, had too much yeast, or too much sugar. Anyways the ez capbulged and split, and the co2 was violently leaking out the top, andwhen the liquid bubbled up, it started coming out of the center ofthe ez cap too. Luckily i was able to plug it up and get it outsidebefore it got all over the place. And it had only been 24 hourssince I started it. I thought the ez cap was supposed to vent theco2, so why would this happen? It says in the directions it isnormal to look bulged out and split, but mine actually cracked ahole in it. I'm a little confused because I have read posts aboutletting excess co2 out of the bottle. When should you let excess co2out?The wines that I have enjoyed have no carbonation. I dont think that it was the temperature, because i had a secondbottle right next to it that was fine(white grape, sugar, yeast). Ihave it about 1 foot away from our gas heater, which does go on andoff, but i dont see how it could have been above 80.. Is it possibleto have too much sugar? I think that could be it because i just re-read the directions for the beer, and it said 1/10 can of malt,water, and yeast. Well I put in malt, water, sugar, and yeast. So Iguess i shouldnt have put any sugar in at all. Thanks for the response. It's about 36 hours later now and it allseems to be going fine. Pressure has built up in the bottle (to thepoint that the pressure release thing is sticking up slightly throughthe hole) and you can see the yeast foam (I don't know what it'sactually called) all on the top. All is going well!I started a second batch earlier this evening with Welch'sPeach/Apple/Grape. We'll see how it goes. I'm excited. Hi everyone,I just received my e-z caps this afternoon, and I was eager to trythem out. I had a 2 liter bottle, and a bottle of natural apple juice.I followed the directions step by step for making the hard cider, andthought I was all set. Then my eyes fell upon "For best results pleaseread instructions on opposite page." Go figure... haha. I should haveread it first!!Anyways, on the opposite page it says to make sure all sugar isdissolved before adding the yeast. I didn't do this! I had 1 cup ofsugar sitting at the bottom of the bottle when I added the yeast. So Iturned it over slowly and just kind of let the sugar drip into theliquid, and then gently rolled it around a little bit. BJ if it was too sweet then why didn't you just let it ferment longer?I'm going to try half sugar half honey like you did.
