I have been making beer for> a few years just started the wine thing> good luckActually the 6 weeks or so for wonder wine is quite fast, another reason I'mskeptical about how this "Kool-aid" could produce a drinkable product soquickly, as a good table wine can take over 6 months to properly produce andanother 6 months before it is drinkable. I used the yeast that came with thewonder wine...probably should have used the EZcaps yeast.I've now been thru my 1st batches of EZ caps and am quite impressed. I wasexpecting something along the lines of "boones farm" or "mad dog 20/20" andinstead ended up with a far more drinkable beverage. The Welches whitegrape-peach concentrate produced a drink that favorably rivaled a $12/bottlecommercial wine we tasted at a local winery recently and was ready to drinkin less than two weeks! (10 days fementing, 3 days clearing) Also did anapple cider, a pear cider, a cranberry juice, and an iced tea. The ciderswere drinkable, but nothing special. I hope to find a recipe to producebetter. The cranberry juice was quite sweet and retained the integrity ofthe cranberry taste, perfect for the wife. The tea was too sweet, I probablyshould have used less sugar and/or fermented longer than 7 days I used 2 1/2cups of sugar in a 2 liter bottle...currently trying again with 1 1/2 cups.Additionally I'm experimenting with a concentrated juice mix (I've beenwarned they don't turn out well) and a concoction of my own consisting of ahalf bottle of 7-up, 1 cup apple juice, 1 cup sugar, and remainderwater...I'll let everyone know how that turns out ;-)Theoretically, I suppose you *should* be able to ferment a straightsugar-water solution. has anyone tried this? I have also read many postswhere people freak out aboutwhat to do with the yeast thatis present in the drink. Mygod people!! Relax. Once yourdrink is done fermenting placein in the fridge. Once it isat fridge temp bleed off the gascompletely. It will stir up thebottom crud but don't worry. Thisis just to get rid of excess gasesthat formed while the drink wasstill fermenting in the fridgebefore it got cold. Now, leavethe drink in the fridge for 72hrs.Clean yourself a new 2L bottle.After 72 hrs. put the bottle in thefreezer for about 15 to 20 minutes.This slows down the agressive bubblingaction when you open the bottle. Nowslowly bleed your bottle by graduallyopening and closing it. Once it is opentransfer slowly into your new 2L bottle.Tilt both bottles at a extreme angle likeyou would when pouring a bottle of bottledcondition Ale. If you do it right no liquidwill run down the side of either bottles.I am getting good at this and only leavea few ounces of wine with all the crud whenI am done. Now, put this bottle back in thefridge for 10 days. After that you will havea very clear wine. I have even transfered mywine into smaller bottles after the firsttransfer. This results is very clear wine withonly a fine layer of yeast on the bottom. Atany rate. Don't Panic!!! It's just yeast.ORGINAL POSTER: ramjammn

I have had EZ caps for just about 1 yearnow. Love them!! I have probably madeclose to 70 batches. Let me sharewhat I have learned. First, use juicesthat are not from concentrate. I havemade pretty good wines with them butthey ferment slower than juices thatare not from concentrate. Second, forsome reason red juices ferment (andwind of stronger) faster than apple.Some of the highest alcohol winesI have made have been either concordgrape or black cherry. My favoritejuices are RW Knudsen (Just juice line)Black Cherry and their Concord Grape.Both of these are pure juice not fromconcentrate. I mix them 50/50 with agood apple juice. My favorite applejuices are Tree Top 3 Apple Reserveand Martinelli's Organic. Both of theseare primo and have no chemicals andare not from concentrate.ORGINAL POSTER: ramjammn

What are the bare necessities for EZ Caps to work? I want to make analmond wine, using about half cup each of almonds and raisins,boiling them in water then adding it to the bottle with sugar andyeast. If I do this, do I need to add juice, or could I just usewater? I think the juice would diminish the flavor of the almonds,so would it still ferment just as well with water as opposed tojuice?
