I didn't want a drink with too much alcohol. That's why I didn't letit ferment longer. And, no I didn't need to boil the honey. Honey instead of sugar? |

Is it possible to achieve the same results, different taste, by addinghoney instead of sugar? Would you use the same amount of honey assugar (2 cups sugar substituted by 2 cups honey)? Has anyone triedthat?ORGINAL POSTER: tiffany

I tried a modified version of a honey mead. I used one cup honey andone cup granulated white sugar then topped it off with apple juice.I fermented for 4 days and got a finished product of about 5%alcohol. It was good, but very sweet. Too sweet for my taste. Nexttime I will either half each or used just the honey.BJORGINAL POSTER: bj

Hi there I got a 1 1/2 litre carton of lemon ice tea liquid and used the whole of it.I have also made wine from cranberry and raspberry tea powder and herbal tea bags such as strawberry and nettle,blackcurrant and many more.Tea wine is nice to try from a good loose tea.The recipe for normal tea wine can be found in many home wine making books.Cheers Andy mattlind@email.com wrote: Sounds good. Hi there,I have made wine from lemon ice tea which turned out quite nice.I got a carton of the ice tea and poured all of it into a gallon fermanting vessel then dissolved two pounds of suger in boiling water and added it to the tea,then added yeast nutrient and finally the yeast.After fermentation had finished I then filtered and racked it.Then bottlled and now all is gone until the next batch is ready.Cheers Andymmadderom wrote: Hi all. They come intwo varieties. One is a box with the yeast packet separate (and aclarifier). The other is just an envelope. I never got the envelope styleto work. The thing to remember with the wonder wine kits is that theydon't have an oak flavoring to them, so the red and white varieties taste alittle technicolor. The fruit varieties are best. But using real juiceand EZ Caps is better.The EZ Caps yeast is better than the type included with the wonderwine kits. It can be used to make either 1/2 a gallon or several hundredgallons.ORGINAL POSTER: steve
