Once you add yeast under theright conditions instead of a juice going bad it makes wine instead. Ifyou refrigerate, its not going to ferment.ORGINAL POSTER: steve

No problem at all. The amount of yeast you'll add will overwhelm the few spoilage bacteria or yeast that find their way in. Later the alcohol will hold them in check.Any of the juices we use must must be ""spoilable"". Hello,I just saw the ezcaps on ebay and was thinking about buying them, butI'm not much for wine or light beers. Does anyone have a recipe for anice, dark stout with a bit of sweetness to it? Unfortunately you can't easily measure the amount of alcohol afterthe beverage is brewed. To measure alcohol content you take a reading witha hydrometer before fermentation and again after fermentation. Thedifference between the 2 is the alcohol content.
