I just started a batch of cranberry wine. I used the regular recipe, butsubstituted about 1/2 cup of real cranberries(for 1/2 cup juice) which were donein a food processor. Hello to all! I purchased a couple sets of the E-Z caps a few months back. Ihave made (29) 2 Liter batches and (9) 3 liter batches. Some have been Greatand some rancid. I have been using air locks on the 3 liter bottles.Today at my local brewing store, I purchased 2 96 oz. containers of Vintner'sHarvest Fruit Wine Base. One is Plum and the other Raspberry. I was curious ifanyone has used this base before and if it would be a good candidate for the E-Zcap method?I know that I will have to cut the portions way back, but the recipe on the cancalls for several ingredients that I am not sure will be required. Like, AcidBlend, Yeast Nutrient, Pectic Enzyme, Campden tablets, Bisulfite and PotassiumSorbate.I am assuming that these products are related to the traditional (Too Long)method of wine making.Thanks in advance and I hope that everyone had a Safe and Happy Holiday Season.ORGINAL POSTER: honest

If you place a beverage into therefrigerator that isn't completely fermented, it will continue to fermentin the refrigerator at a VERY VERY slow pace (i.e what you use to countin days now takes months). If you take such a beverage out of therefrigerator, it may begin active fermentation again. It isimportant to ensure fermentation is complete or almost completed beforebottling your beverage at room temperature. Failure to followthis rule can result in burst bottles and possibly even personalinjury. I don't use additives in my beverages but that is apersonal choice . I let the yeast die naturally by letting theyeast dine until it dies of it's own alcohol poisoning or bystarvation. Bottling your beverages is fun and it allows differentflavors to develop over time.Question #11a: How long does bottled EZCaps last before going bad?Answer: This depends on many factors includingtemperature, alcoholic and sugar content of the beverage, and storageconditions. My house is pretty cold, so I put 3 bottles in a 5 gallon drink container with aheating pad in the bottom. On low, the blanket keeps the bottles right at 74degrees...I throw a towel over the whole thing. I am on my second batch andthis works for me!ORGINAL POSTER: susanwalton1960

I keep mine on the bar so everyone can see them during the fermentation process. I use 1/8th every time, and have been more than happy with the results. Also, kep in mine its not a full 2 liters if that helps, you're only suppose to fill it 90% of the way.
